Fellowship Meal Delight!

Today was one of my favorite Sundays ... because ... it was fellowship meal Sunday!  Yesterday, I was trying to figure out what to make and decided to make "Dad's Pineapple Cake" ;-) because it's SO simple and VERY delicious (if you like pineapple that is ;-)  I made a few additions to the recipe and it turned out GREAT! You know it's a success when ... an older gentleman in the church that you don't talk to much, makes a point to track you down to tell you that "You can make that cake any time you want too!"


Pineapple Angel Food Cake

Cake
Ingredients:   1 box of Angel Food Cake Mix
                       20 oz. can of Crushed Pineapple

Directions:  In a large mixing bowl, combine dry cake mix with the entire can of crushed pineapple.  Mix by hand until combined ... when you do this, the mixture starts to froth and it turns into an amazingly airy, fluffy bowl of deliciousness right before your eyes!  Pour into a greased 9x13" pan or 2 - 8 or 9" round cake pans.  Bake at 350 degrees for 30 minutes.
Frosting
Ingredients:    8 oz. container Cool Whip
                       3.4 oz. pkg Instant Vanilla Pudding
                        15 oz. can of Crushed Pineapple (drained)

Directions:  In a medium mixing bowl, combine Cool Whip, dry pudding mix and crushed pineapple (drained). That's it!  

This was a fun way to "dress up" a very simple cake!  For lazy days .. you can simply frost with a container of Cool Whip. ;-)

  1. Just pulled this cake out of the oven and it smells great! Hoping it's a hit because it was very simple to make and only cost me $2 to buy (minus the frosting). Thanks for the recipe!
